Frozen Garlic Scape Cubes

I LOVE garlic scapes. So fresh and flavorful, I add them to everything when I have them. With almost more than I could handle and wanting to enjoy them a few times this winter, here's how I preserved them the simplest way I knew how.
Ingredients
- Garlic scapes, tips and ends removed (about 20 scapes)
- Olive oil (roughly 1 cup)
Instructions
- Wash and trim your garlic scapes and toss them in a food processor with a little olive oil.
- Add more oil as you process the scapes into a creamy paste.
- Pour mixture into an ice cube tray and freeze. Once frozen, remove scape cubes from tray and place in a freezer bag. Just wait until January when you can start out a dish by tossing one of those cubes in your pan - oil and flavor, covered.

Here are a few ideas for using your preserved garlic scapes:
Use in stir fries, soups, or any other dish that uses garlic
Add to homemade bread dough to add flavor
Thaw and add a little more oil and salt to use as a dip for fresh bread
